Plum, Mint and Lemon Sorbet Sundaes

Makes 6 servings

Ingredients

  • 1 1/2 cups sliced pitted red plums (about 3 medium)
  • 8 mint leaves, minced
  • 2 tsp sugar
  • 1 1/2 cups lemon sorbet

Instructions

  1. Toss the plums, mint and sugar in a large bowl; refrigerate at least 1 hour or up to 24 hours.

  2. Place 1/4 cup scoop of sorbet in each of six bowls; spoon 1/4 cup plums and a teaspoon or two juice over each sorbet scoop.

Serving size: 1 sundae
