Easy Cheesy Eggplant Casserole recipe

3 WW points per serving

1 cup Barilla spaghetti sauce
3/4 cup shredded low-fat mozzarella cheese
3/4 cup nonfat cottage cheese
2 tablespoons Parmesan cheese, grated
3/4 pound eggplant, sliced 1/2-inch thick

Grill eggplant on George Foreman Grill for about 5-10 minutes until soft.

Spray an 8-inch square baking pan with nonstick spray. Put eggplant on bottom of pan. Spread spaghetti sauce over eggplant. Mix cottage cheese and mozzarella, and spread it over sauce. Sprinkle with Parmesan cheese. Bake at 350 degrees F for 30 to 35 minutes and serve hot.

just so you know, the family and i tried this last night 6.26.2007 and i brought some for lunch today 6.27.2007...... very good, but i recommend 1 hour of baking as opposed to the 30-35 minute suggestion. we tried it after 30 minutes and it wasn't quite right. 1 hour made it perfect!!!
