Ham and Broccoli Cornbread

Serving Size : 12

4 Points Per Serving

8 ounces cornbread mix
1 medium onion -- chopped and sautéed
2 egg whites -- lightly beaten
1/2 cup skim milk
3 tablespoons olive oil
1 cup creamed corn, low calorie
4 ounces lowfat cheddar cheese
dash red pepper -- more if you want
1 teaspoon chili powder
2 cups frozen broccoli -- defrosted
2 cups lean ham
salt and pepper -- to taste

Cook onions until tender with nonstick spray. In large bowl, mix cornbread mix,
onions, beaten eggs, milk, olive oil, cream corn, cheese, red pepper, chili powder,
broccoli, ham, salt and pepper. Blend well. Pour into 9 x 13 pan (spray with nonstick spray). Preheat oven to 375º. Bake for 30-35 minutes. Good with a salad!
